SummerYokan (bean jelly)
Mizu Yokan
水羊羹
A soft, chilled bean jelly that melts on the tongue in the summer heat.
About this wagashi
Mizu yokan uses more water and less sugar than ordinary yokan, so it is lighter and smoother. Served chilled, it has long been a favorite summer gift in Japan.
How it is made
Agar is dissolved in water, smooth bean paste is stirred in, and the mixture is cooled gently so it sets evenly without separating.
