WinterMochi sweets
Hanabira Mochi
花びら餅
A New Year sweet of white mochi folded over pink, with miso bean paste and burdock.
About this wagashi
Hanabira mochi comes from a New Year dish of the imperial court. Since the late 19th century it has been served at the first tea ceremony of the year, so it is made for only a few weeks in winter.
How it is made
A thin round of white gyuhi is layered with a pink disc, topped with sweet miso bean paste and a stick of candied burdock, then folded in half.
