SpringMochi sweets
Sakura Mochi
桜餅
Pink mochi with sweet bean paste, wrapped in a salted cherry leaf.
About this wagashi
Sakura mochi is the classic sweet of cherry-blossom season. In eastern Japan it is a thin pink crepe rolled around bean paste; in western Japan it is made from coarsely ground glutinous rice. The salted leaf adds a gentle fragrance and a hint of salt.
How it is made
For the western style, steamed glutinous rice is tinted pink, wrapped around bean paste, and finished with a cherry leaf preserved in salt since the previous spring.
