Nerikiri
練り切り
Sweet bean paste shaped by hand into the flowers and scenes of each season.
About this wagashi
Nerikiri is made from white bean paste kneaded with a little mochi or yam, which makes it smooth and easy to shape. The design changes through the year: cherry blossoms in spring, hydrangeas in early summer, maple leaves in autumn. It is often served with matcha at tea ceremonies.
How it is made
The artisan colors the dough, wraps it around a filling of bean paste, and shapes it with fingers, a triangular wooden stick (sankaku-bera) and a fine cloth. A single piece takes only a few minutes in skilled hands.
